Greek Summer Salad with Baked Honey Feta

🍅 Why This Salad is Changing the Game
We know Greek salad is everywhere. But trust us, you haven’t had this one.
Golden, oven-baked feta drizzled with wildflower honey. Juicy tomatoes, crunchy cucumber, salty Kalamata olives. All finished with a hit of Greek oregano and a bold glug of extra virgin olive oil.

🌿 What Makes It So Good (Hint: It’s the Olive Oil & Honey)
This meal is all about sourcing ingredients that will sing.
We use:
Cold-pressed extra virgin olive oil from early-harvest Koroneiki olives grown on our family grove in Kalamata
Unblended raw wildflower honey from bees high on Mount Taygetos, foraged from thyme, oregano, and rockrose
The result? A recipe rich in taste, texture, and nutrients- the very heart of the Mediterranean diet.
👩🍳 Greek Salad with Baked Honey Feta & Oregano Oil
Serves: 2 (main) or 4 (side) Prep time: 10 mins Cook time: 15 mins
🧀 Ingredients:
200g block of Greek feta
1 tbsp raw Greek honey
4 tbsp extra virgin olive oil (divided)
1 tsp dried oregano (order from us this month for a free sample of Greek oregano, grown next to our olive groves)
2 large ripe tomatoes, cut into wedges
1/2 cucumber, sliced
1/2 red onion, thinly sliced
Handful of Kalamata olives
🔥 Instructions:
Preheat oven to 190°C (170°C fan).
Place the feta in a small oven-safe dish or on baking paper in a tray. Drizzle with 1 tbsp olive oil and 1 tbsp honey. Bake for 15–18 minutes, or until golden and soft at the edges.
In the meantime, whisk 3 tbsp olive oil with dried oregano and a pinch of sea salt.
Assemble the salad: lay out tomatoes, cucumber, onion, and olives.
Gently place the warm honey-baked feta on top, then spoon over the oregano oil.
Serve with warm Greek pitta bread or fresh sourdough.
